Composition

Golden Tippy black tea, lot OR39, Donyi Polo Tea Estate, Arunachal Pradesh, India. Fully hand-harvested and hand-crafted, directly sourced.

Tasting

Deep, bright amber liquor. The nose evokes honey and cocoa. On the palate, a soft honeyed attack, fine malt, notes of biscuit and dried fruit. Silky texture, almost no astringency, a clean, faintly sweet finish. A contemplative tea, to be drunk neat.

The Donyi Polo Estate

Founded in 1985 on the banks of the Siang river, at the foot of the eastern Himalayas, Donyi Polo spans 420 hectares of tea and 320 hectares of preserved forest. The estate turned its back on the industrial CTC that dominates neighboring Assam for fully artisanal orthodox production, led by the village women, trained in the methods of great tea masters. It is one of the few estates in the world growing all three tea plant varieties: sinensis, assamica and cambodiensis.

Tips

Drink neat, without milk or sugar. Brew at 90°C rather than a full boil to preserve the delicacy of the buds. 2.5 g per 200 ml, 3 to 4 minutes.
